Will It Sous Vide? Let's Pick Another Topic!


Hello, my favorite friends, and welcome back to the last topic picking session of the year for Will It Sous Vide?, the weekly column where I make whatever you want me to with my immersion circulator.

Last week we tested out tamales, and I wouldn’t mind revisiting that at some point, but I’d like to do something fun and celebratory for our last grand experiment of 2016. (Also, I am currently working from my grandmother’s kitchen in small town Mississippi, so I wouldn’t mind keeping it fairly simple, ingredients-wise.) Some ideas:

  • Chicken Liver Mousse: I could see this turning into a very flavorful, New Year’s Eve-appropriate canape.
  • Hoppin’ John: Because I love black eyed peas.
  • Some Sort of Marinated Fruit: For putting on ice cream, cakes, oatmeal, whatever.
  • Chicken Wings: Finished under the broiler, of course. (TSA wouldn’t let me bring my propane torch.)

As usual, I am wide open to any and all festive suggestions that may pop into your beautiful brains, so go crazy!
